300g belly pork for one
Cooking roughly 300g of belly pork - serves 1
- Score the skin, deep, but don't cut the meat.
- Rub in butter and lots of salt....right into the grooves.
- Leave to rest - at least 30 mins.
- Pad dry with kitchen towel, after the salt has drawn out some water.
- Gas mark 9 - 30 mins.
- Gas mark 5 - 30 mins.
Don't forget to rest the meat for 10 mins.
